Add to tomato based sauces, onions, sausages, poultry, meat dishes, beans and lentils, fish, shellfish, sweet corn, mild cheeses, avocados.

Take care when handling chillies, as they can literally burn the skin, especially areas like the eyes, mouth and face. Take out seeds for a less pungent flavour. Use whole chillies to flavour food and then take out when required strength is reached. The skins are best removed from fresh chillies before use.

If you do get chilli burns in the mouth use milk, yougurt or ice cream to sooth.
